Pickled Herrings

Pickled herrings and baked jacket potatoes made a delicious meal for dinner or supper.

The Recipe

You will need

  • six fresh herrings
  • one teaspoonful pickling spice
  • one pint vinegar
  • onion rings
  • a little salt
  • quarter pint cold water (approximately)
  • one teaspoonful black treacle
  • a little cornflour

Method

  1. Put the herrings (split open and cleaned in the usual way) in an earthenware dish and cover with the vinegar and water. 
  2. Add them to the spice, salt and onions.
  3. Dissolve the treacle in a little warm water and pour it over the herrings. 
  4. Blend the cornflour with cold water and add it to the liquid in the dish. 
  5. Bake in a slow oven until the bones have disintegrated.
