Steamed Salmon or Sewin

Steamed or poached salmon was highly commendable for a person suffering from a stomach ailment.

The Recipe

You will need

  • salmon steak (approximately one pound)
  • pepper and salt
  • butter
  • water
  • fennel (or vinegar)

Method

  1. Using a double saucepan, put a few fennel leaves in the lower one and fill it with water. 
  2. Season the salmon steak with pepper and salt, put a large knob of butter on top and place in the second saucepan, over the lower one. 
  3. Boil the water and allow the salmon to cook in this steam for about fifteen minutes.
  4. Alternatively, place the salmon steak on a greased enamel plate, rest it on top of a saucepan of boiling water and cover it with the saucepan lid. 
  5. Steam the fish in this way, allowing fifteen minutes per pound weight.
