Salmon Boiled in Milk

The Recipe

You will need

  • salmon steak
  • salt
  • milk

Method

  1. Immerse the salmon steak in boiling milk, add salt to taste and simmer gently, allowing about fifteen minutes for every pound in weight. 
  2. Boiling it too briskly will cause the salmon to flake in the milk.
  3. When cooked, drain and slice as needed. 
  4. Serve warm with potatoes baked in their jackets or cold with fresh cream.
