The Recipe
You will need
- half a pound plain flour
- two ounces sugar
- two ounces currants
- a pinch of salt
- a pinch of bicarbonate of soda
- quarter pound butter
- two eggs
- a little sour buttermilk
Method
- Dissolve the bicarbonate of soda in a teaspoonful of sour buttermilk.
- Melt the butter over a pan of hot water.
- Beat the eggs and pour slowly on to the melted butter and then add the sour buttermilk mixture.
- Gradually pour this liquid mixture into the dry ingredients in a bowl and beat thoroughly to make a fairly stiff batter.
- Drop the batter from a tablespoon on to a greased bakestone or iron pan, and bake as for pancakes.
- Then split in half and spread with butter.
- Serve warm.
