The Recipe
You will need
- plain flour
- salt
- sugar
- currants
- a little suet
- bicarbonate of soda
- boiling water
- buttermilk
- (Quantities were measured by rule of thumb)
Method
- Put all the dry ingredients in a bowl.
- Dissolve the soda in the warm water and allow to cool before adding the buttermilk to it.
- Pour this liquid gradually into the dry ingredients and stir well with a wooden spoon.
- Put the mixture in a linen cloth, tie securely and immerse in boiling water. Boil for approximately two hours.
Slice and serve with white sauce.
