Boiled Pudding
Gower
This pudding was served, fairly regularly, as a second course for the mid-day meal during the winter months in the Gower area.
Gower Peninsula.
The Recipe
You will need
- six ounces plain flour
- two ounces sugar
- two ounces fat (butter or lard)
- half a pint hot milk
- one teaspoonful ginger
- half a teaspoonful bicarbonate of soda
- dried fruit, if desired
Method
- Melt the fat in the hot milk and pour gradually into the dry ingredients.
- Mix together well and put the mixture in a greased basin.
- Cover with greaseproof paper or cloth, tie securely and stand the basin in a saucepan half full of water.
- Boil for approximately one and a half hours.
