Boiled Pudding

Gower

This pudding was served, fairly regularly, as a second course for the mid-day meal during the winter months in the Gower area.

Gower Peninsula.

The Recipe

You will need

  • six ounces plain flour
  • two ounces sugar
  • two ounces fat (butter or lard)
  • half a pint hot milk
  • one teaspoonful ginger
  • half a teaspoonful bicarbonate of soda
  • dried fruit, if desired

Method

  1. Melt the fat in the hot milk and pour gradually into the dry ingredients. 
  2. Mix together well and put the mixture in a greased basin. 
  3. Cover with greaseproof paper or cloth, tie securely and stand the basin in a saucepan half full of water. 
  4. Boil for approximately one and a half hours.
