Pouring cold milk over the apple dumplings

This pudding, being inexpensive to prepare, was eaten fairly regularly by the thrifty families.

The Recipe

You will need

  • five ounces bread-crumbs
  • one egg, well beaten
  • two ounces butter
  • two ounces sugar
  • one lemon
  • one cupful milk
  • quarter pound raisins
  • nutmeg

Method

  1. Boil the milk and pour it over the sugar and bread-crumbs. 
  2. Then add the beaten egg, the rind and juice of the lemon, the butter and the nutmeg. 
  3. Beat well for several minutes. 
  4. Grease a pudding basin thickly with butter, dot the raisins in this butter layer and pour the mixture into the basin. 
  5. Stand the basin in a saucepan with boiling water and boil for approximately one and a half hours.
