Gooseberry Jam

The Recipe

You will need

  • two pounds gooseberries
  • eight cupfuls cold water
  • seven pounds sugar

Method

  1. Pour the water over the gooseberries and boil for half an hour. 
  2. Add the sugar and boil for a further twenty minutes. 
  3. Leave to cool slightly before pouring it into pots. 
  4. Cover each pot while the jam is warm.
