Bara Brith – Currant Bread

Cardigan, Ceredigion

The Recipe

You will need

  • one pound plain flour
  • three ounces butter
  • three ounces sugar
  • a little salt
  • six ounces mixed fruit
  • half an ounce dried yeast
  • half a pint milk
  • one egg, well beaten
  • a little nutmeg

Method

  1. Melt the butter in the milk over a low heat. 
  2. Put all the dry ingredients in a warm bowl together with the yeast, rubbed into fine crumbs. 
  3. Add the egg to the warm milk and butter and pour this mixture gradually into the dry ingredients, to make a soft dough. 
  4. Cover and allow to rise in a warm place until it is twice its original size. 
  5. Then knead the dough lightly on a floured board and shape into loaves according to the size of the tins. 
  6. Put into greased tins and allow to rise again for a short period. 
  7. Bake in a moderately hot oven for approximately one hour, according to the size of each loaf.
