The Recipe
You will need
- half a pound plain flour
- two teaspoonfuls ground ginger
- one teaspoonfuls mixed spice
- two ounces butter
- eight tablespoonfuls black treacle or syrup
- one ounce soft brown sugar
- one egg
- quarter pint milk
- half a teaspoonful bicarbonate of soda
Method
- Melt the treacle, butter and sugar over a low heat.
- Sift the flour, ginger, spice and soda into a bowl and pour in the melted treacle mixture.
- Beat the egg and milk together, add them to the other ingredients in the bowl and mix all together thoroughly.
- Grease a shallow cake tin and line with greaseproof paper.
- Put the mixture into it, spread evenly and bake in a moderately hot oven for approximately forty minutes.

'Mixed Spice' can contain cloves, nutmeg (or mace, which is more economical) and cinnamon. Commercially prepared mixed spice can also contain ginger and coriander seeds. In recreating 17th Century gingerbread at St Fagans, I personally experimented with using sweet cicely root and aniseed, as they would have been available at the time and add a good flavour to the gingerbread. The recipe above, however, was recorded in the 20th century and so commercially-prepared mixed spice might be more appropriate if you are hoping to prepare an 'authentic' recipe.
