Parsley Pie

The Recipe

You will need

  • one pound mashed potatoes
  • two ounces bacon
  • two ounces cooked lean meat
  • one onion, chopped finely,
  • a little chopped sage
  • salt and pepper
  • short-crust pastry

Method

  1. Cut the bacon into small pieces and fry lightly. 
  2. Add the chopped onion and fry together for a few minutes. 
  3. Add the diced cooked meat and the sage and heat thoroughly for a further few minutes before mixing with the mashed potatoes. 
  4. Season with salt and pepper.
  5. Line a pie dish with the pastry and bake blind in a hot oven. 
  6. Fill the pastry case with the prepared mixture and bake in a hot oven for about ten minutes until the top is golden brown.
  7. Serve the pie hot with gravy.
