Pease Pudding

Gower

A typical Welsh farmhouse kitchen table, at which manservants sat at meal-times.

The Recipe

You will need

  • half a pound split peas
  • one egg, well beaten
  • a little butter and sugar
  • salt and pepper

Method

  1. Wash the peas thoroughly and soak in cold water overnight. 
  2. Put the peas in a muslin bag, tie securely, but allow for expansion. 
  3. Put the bag in a saucepan, cover with boiling water, and add a little salt. 
  4. Boil briskly for about two hours or until the peas are soft. 
  5. Lift the bag out of the water and drain. 
  6. Take the peas out of the bag and work them through a fine sieve or colander into a large dish. 
  7. Add the butter, the egg, salt, pepper and sugar. 
  8. Beat well for a few minutes until thoroughly mixed. 
  9. Place the mixture on a floured cloth, roll up and tie both ends securely. 
  10. Boil the pudding for another half an hour. 
  11. Turn out on to a hot dish, slice and serve with salt beef or pork.
