The Recipe
You will need
- half a pound split peas
- one egg, well beaten
- a little butter and sugar
- salt and pepper
Method
- Wash the peas thoroughly and soak in cold water overnight.
- Put the peas in a muslin bag, tie securely, but allow for expansion.
- Put the bag in a saucepan, cover with boiling water, and add a little salt.
- Boil briskly for about two hours or until the peas are soft.
- Lift the bag out of the water and drain.
- Take the peas out of the bag and work them through a fine sieve or colander into a large dish.
- Add the butter, the egg, salt, pepper and sugar.
- Beat well for a few minutes until thoroughly mixed.
- Place the mixture on a floured cloth, roll up and tie both ends securely.
- Boil the pudding for another half an hour.
- Turn out on to a hot dish, slice and serve with salt beef or pork.
