Loaf Cake

A simple method of making loaf cake, commonly practised in farmhouses at harvest time.

The Recipe
You will need
- a large piece of freshly risen dough
- lard or butter
- brown sugar
- currants
- raisins
- a little spice
- one egg, well beaten
Method
- Having kept a large piece of freshly risen dough, work in the butter or lard and then the other dry ingredients.
- Add the beaten egg, knead and leave to rise in a warm place.
- Put in a warm, greased tin and bake in a moderately hot oven, as for bread.
