Loaf Cake

Loaf cake, the rich, yeast fruit cake baked for Christmas in the counties of south Wales.

A simple method of making loaf cake, commonly practised in farmhouses at harvest time.

The Recipe

You will need

  • a large piece of freshly risen dough
  • lard or butter
  • brown sugar
  • currants
  • raisins
  • a little spice
  • one egg, well beaten

Method

  1. Having kept a large piece of freshly risen dough, work in the butter or lard and then the other dry ingredients. 
  2. Add the beaten egg, knead and leave to rise in a warm place. 
  3. Put in a warm, greased tin and bake in a moderately hot oven, as for bread.
