A Quick-mix cake

The Recipe

You will need

  • two ounces butter
  • two ounces sugar
  • two ounces currants
  • half a pound plain flour
  • a pinch of salt
  • milk

Method

  1. Rub the fat into the flour and add the other dry ingredients. 
  2. Mix gradually with a little milk to give a fairly soft consistency.
  3. Put the mixture into a greased, shallow tin and bake in a moderately hot oven.
  4. Alternatively, keep the mixture fairly stiff and spread evenly on a moderately hot bakestone. 
  5. Bake on both sides and then split open while warm and spread with butter.
