The Recipe
You will need
- two cupfuls rice
- a little salt
- water
- one pound plain flour
- half a pound butter
- one teaspoonful baking powder
- four eggs
- milk
- sugar – according to taste
- a little nutmeg
Method
- Boil the rice in salted water until soft and fluffy.
- Rub the fat into the flour and then work in the rice and the other dry ingredients.
- Finally add the eggs and a little milk to give a lighter batter consistency. Then pour the batter into a greased shallow tin and bake in a fairly hot oven.
- Alternatively place in a low position under a hot grill.
- Traditionally this cake was baked in a Dutch oven in front of an open fire.
