Rice Cake

The Recipe

You will need

  • two cupfuls rice
  • a little salt
  • water
  • one pound plain flour
  • half a pound butter
  • one teaspoonful baking powder
  • four eggs
  • milk
  • sugar – according to taste
  • a little nutmeg

Method

  1. Boil the rice in salted water until soft and fluffy. 
  2. Rub the fat into the flour and then work in the rice and the other dry ingredients. 
  3. Finally add the eggs and a little milk to give a lighter batter consistency.  Then pour the batter into a greased shallow tin and bake in a fairly hot oven. 
  4. Alternatively place in a low position under a hot grill. 
  5. Traditionally this cake was baked in a Dutch oven in front of an open fire.
