Anne Davies’ Cake

Ann Davies kept a shop in Kidwelly at the beginning of this century. She baked bread and cakes in a large oven behind the shop and her fruit cake (recipe as above) was in great demand, at sixpence per round.
Miss Davies died in the Spring of 1928.

The Recipe
You will need
- one pound and a half plain flour
- one pound and a half currants
- one pound sugar
- quarter pound butter
- half a pound lard
- half a teaspoonful nutmeg
- half a teaspoonful mixed spice
- half a teaspoonful baking powder
- quarter teaspoonful salt
- half a pint milk
- two eggs, well beaten
Method
- Rub the butter and lard into the flour and sugar and add all the other dry ingredients.
- Make a well in the centre of this mixture, pour the eggs into it and gradually add the milk, mixing all together to give a fairly soft consistency.
- Grease two cake tins, divide the mixture equally between them and bake in a moderately hot oven for about one and a half hours.
