Pouring a small quantity into a cast iron saucepan. Mrs Catrin Jones, Bala, Merioneth.

The Recipe

You will need

  • one large cupful oatmeal
  • one quart cold water
  • half a cupful buttermilk
  • one pint cold water
  • a little sugar and ginger

 

Method

  1. Leave the oatmeal to steep in the quart of cold water and buttermilk for two nights until soured. 
  2. Then pour off the surface water and pour two tablespoonfuls of the mixture through a fine sieve. 
  3. Add to it the pint of cold water, flavour with a little sugar and ginger, and boil for about ten minutes. 
  4. It should be as thin as milk after boiling.
  5. The remainder of the mixture may be kept fresh for a few days by draining the surface water and replacing it with fresh water.
