Ginger Beer

A drink favoured by farmers during the hay harvest.

The Recipe
You will need
- one handful dandelion leaves
- a few blackcurrant leaves
- half a stick of rhubarb
- a small lemon (sliced)
- two quarts cold water
- bruised root-ginger
- one ounce yeast on a slice of bread
- two pounds granulated sugar
- one gallon boiling water
Method
- Put the leaves, the lemon and the ginger in the cold water and boil for half an hour.
- Strain the liquid into a large pan, add the boiling water to it and dissolve the sugar in it.
- Leave to cool to blood heat and then add the yeast.
- Allow to stand overnight, then strain and bottle.
