Roman pottery cheese press
A fragmented ceramic cheese press in two parts. It is circular and bowl shaped with almost straight sides and a flat base. The vessel possesses two basal ridges and a central circular knob. Between the basal ridges, there are arranged in a cross, three rows of small circular drainage holes. The outer surface of the bowl has the same arangement of holes. The fabric of the cheese press is pale orange in colour and has very frequent sand inclusions. To use the cheese press, curds would be poured into a cheese cloth placed in the mould and whey forced to drain away by the application of pressure (probably in the form of a weight). The cheese would be removed and stored in a cool place before being salted and compressed again.
